지속가능한 전통식생활 인식성향이 약선메뉴 가치및 약선메뉴 신뢰에 미치는 영향 / Effects of Perceptions of Sustainable Traditional Diet Style on Value and Trust of Yaksun Menu

Abstract
The investigation and analyses conducted in the present study intended to identify the effect of cognitive disposition to sustainable traditional dietary lives of people on the value and reliability of dishes of medicinal (herbal) foods to raise the potential of development of traditional foods and to provide baseline data for the commercialization of medicinal (herbal) foods.The factor analysis on cognitive disposition to sustainable traditional dietary lives of subjects participated in the present study were carried out, wherefrom the cognitive disposition was classified into in terms of social, of policies, and environmental cognitive disposition, while the values of the menu of dishes of medicinal foods were distinguished into traditional- and creative ones; the test of hypothesis established for the study was also carried out to determine the effect of cognitive disposition to sustainable traditional dietary lives on reliability of menu of medicinal foods. The Smart PLS program was employed for the test of hypothesis, wherefrom the cognitive disposition to traditional dietary lives, in respects of policies and social perspectives, appeared affecting values of traditional medicinal foods, while the values of traditional and creative menu of medicinal foods were found affecting the reliability of medicinal foods significantly. Whereas, the cognitive disposition to traditional dietary lives, in respect of policies of traditional dietary lives, exhibited significant effect on the reliability of medicinal foods via mediation of values of traditional medicinal foods.In addition, the effects of adjustment of the ages and careers of people were verified, wherefrom the people, of the age below 40s, appeared with increasing reliability on menus of medicinal foods in accordance with higher level of cognitive disposition to social and traditional dietary lives comparing to people of the age over 40s, and the value of menus of creative medicinal foods, found from short-careered people, were identified as increasing in accordance with higher level of cognitive disposition to traditional dietary lives developed through policies.The cognitive disposition to sustainable traditional dietary lives with values of menus of medicinal foods, and effect of cognitive disposition to sustainable traditional dietary lives on reliability of medicinal foods, were identified in the present study. Based on results obtained from the present study, the inherent values of traditional foods representing healthfulness, environmental friendliness, and creativeness, are expected to be propagated systematically in the current westernized dietary culture, and further, it is also expected that the results obtained from the present study could be exploited for the development of practical menus of medicinal foods healthful for people living in contemporary age by adding diverse medicinal materials for foods.
본 연구는 지속가능한 전통식생활 인식성향이 약선메뉴 가치 및 약선 메뉴 신뢰에 미치는 영향을 파악하여 약이 되는 우리 전통 음식의 발전 가능성을 제고하고 약선 음식의 산업화 방안을 위한 기초 자료를 마련하고자 조사·분석하였다. 조사 대상자의 지속가능한 전통식생활 인식성향의 요인 분석을 통해 사회적, 정책적, 환경적 인식 성향으로, 약선메뉴 가치는 전통적, 독창적 메뉴 가치로 분류되었고, 약선메뉴 신뢰에 미치는 영향을 확인고자 연구 가설 검증을 실시하였다. Smart PLS 프로그램을 활용하여 가설 검증을 실시한 결과, 정책적, 사회적 전통식생활 인식성향은 전통적 약선메뉴 가치에 영향을 미치며, 전통적, 독창적 약선메뉴 가치는 약선메뉴 신뢰에 유의한 영향을 미치는 것으로 나타났고, 정책적 전통식생활 인식성향은 전통적 약선메뉴 가치를 매개로 약선메뉴 신뢰에 유의한 영향을 미치는 것을 확인하였다. 또한 연령과 요리 경력의 조절효과 검증 결과, 40대 이하는 사회적 전통식생활 인식성향이 높을수록 40대 이상에 비해 약선메뉴 신뢰가 높아지며, 요리경력이 짧을수록 정책적 전통식생활 인식성향이 높아질수록 독창적 약선메뉴 가치가 높아지는 것을 확인하였다. 이처럼 지속가능한 전통식생활 인식성향과 약선메뉴 가치, 약선메뉴 신뢰에 미치는 영향을 토대로 간편화, 서구화된 지금의 우리 식문화 속에서 우리 전통식문화의 건강성, 친환경성, 독창성 등 고유의 가치를 체계적으로 알리고 좀 더 다양한 약선 식재료를 첨가하여 현대인들의 건강에 도움이 되는 실용적인 약선메뉴 개발에 필요한 자료로 본 연구가 활용되기를 기대해본다.
