Abstract
随着近期新型冠状病毒逐渐消散, 在之前的COVID-19时期受到重创的餐饮业迫切需要 调整其经营策略. 这对于提升营业利润和客户恢复以及保持长期竞争力至关重要. 因此, 本 研究以受新冠疫情影响相对较小的知名中餐连锁企业海底捞为研究对象, 结合文献和案例 分析海底捞面临的内外部环境和竞争力. 分析结果显示, 海底捞在企业规模、产品质量、服务质量、员工管理等方面具有显著优 势. 后COVID-19时代, 海底捞面临来自竞争对手的激烈竞争, 但海底捞有望获得更多的机 会而不是威胁. 此外, 本研究对提高韩国和中国食品服务公司的竞争力和发展战略提供了 启示.
With the recent gradual disappearance of the Covid-19, the catering industry, which was heavily hit during the COVID-19 period, urgently needs to adjust its business strategies. This is crucial for improving business profits, recovering customers, and maintaining long-term competitiveness. Therefore, this study focuses on Haidilao, a well-known Chinese restaurant chain that was relatively less affected by the COVID-19 pandemic. By combining literature and case analysis, the study examines the internal and external environment and competitiveness faced by Haidilao. The analysis results show that Haidilao has significant advantages in terms of company size, product quality, service quality, and employee management. In the post-COVID-19 era, Haidilao faces intense competition from competitors, but it is expected to gain more opportunities rather than threats. Furthermore, this study provides insights into improving the competitiveness and development strategies of food service companies in both South Korea and China.
