To detect the odorants in the atmosphere, many gas sensors are invented by researchers. Inspired by the outstanding sensing performance of animal olfactory systems, scientists fuse the biological materials with the transducers to form odor biosensors. These odor biosensors inherit the sensing ability of living organisms and present excellent detection performance, thereby being well developed in recent few decades.In this chapter, we first introduce the conception of odor biosensor and list some typical biosensors with diverse sensing mechanisms. Then enumerate the odor biosensors according to their sensitive material types. The biological materials used in odor biosensors are mainly extracted from the creatures’ olfactory systems. Among these odor biosensors, we further focus on the odor biosensor based on cell-expressing olfactory receptor, describe the liquid- and gas-phase biosensors and their related techniques in detail.
