Lingering Flavors: The Morisco Heritage in Southeast Spain Through its Traditional Recipes.

Abstract
This article examines the Morisco cooking heritage in the regions of Vall de Gallinera and La Costera, located in the provinces of Alicante and Valencia, in Southeast Spain. It provides a historical approach to several specific recipes, tracing their origins and evolution until the present day It r from argues that the influence of Morisco cooking, rar disappearing with the expulsion of the Moriscos (as converted Muslims were known) in the seventeenth century, survives to this day, transformed by Christian customs and modified in various ways by the Christian population. Evidence of the Morisco presence in the area can be seen in the toponymy of numerous towns, the current agricultural practices of the region, and the local gastrononly. The Nioorish influence on the gastronomy of the region is exaillined here, specific case studies are provided to illustrate it, and a new etymology for a traditional dish, arnadi de carabassa, is proposed. This essay shows that many elements of Al-Andalus cuisine have survived in contemporary Spain centuries after the expulsion through a process of appropriation by the Christian majority. Ultimately, the goal of this article is to highlight the role played by the food of minority and repressed communities in the context of mainstream culture and to demonstrate that food traditions can be powerful evidence of culturalidentin'and the identity-building process of a nation.
