Antioxidant Contents and Activities of Naked Oat According to Germination Condition

Abstract
The purpose of this study was to evaluate the antioxidant content and activity of naked oat cultivar ‘Choyang’ according to germination condition. The antioxidant content and activity of naked oat were significantly increased after germination compared to raw naked oat. The effect of steeping time (4, 8, 16 h) on antioxidant content and activity of germinated oat was investigated. Total polyphenol and flavonoid contents and antioxidant activity (DPPH and ABTS radical scavenging activities and FRAP value) substantially decreased with increasing steeping time. This study further investigated the effects of germination temperature (20℃, 25℃, and 30℃) and time (24, 48, and 72 h) on antioxidant content and activity of germinated oat. Total polyphenol and flavonoid contents and antioxidant activity increased with increasing germination temperature and time.
