Abstract
The objective of this study is to procure the understanding and awareness among customers of Gamjatang restaurants in Busan area through big data analytics of online customer reviews. Reviews used in this study were collected from Google travel by SCTM 3 with keywords "Gamjatang restaurants". Time span of data was from January 1st, 2019 to June 1st, 2021. As results, 5,414 reviews from 105 restaurants were collected and 70 top frequent words like "Gamja", "Taste", "Service", etc. were extracted to process semantic network analysis. For understanding the semantic network of top frequency words,Ucinet 6.0 was applied and centrality coefficient of these words were calculated to illustrate the connection and significance of these words. Furthermore, CONCOR analysis for clustering was conducted and four segmentations, "Food", "Location", "Internal Environment" and "Service" were obtained. Collectively, relative implications for the industry and future research could be well provided and discussed.
