Abstract
Description et catalogue d'un groupe de dispositifs à feu de la partie Sud du Tell Abu Salabikh, au Sud de l'Iraq. Des parallèles archéologiques et ethnographiques aident à déterminer les fonctions des trois principaux types d'installations. Le premier type est le four à pain bien connu (tannurj; le deuxième type est représenté par un groupe de foyers ouverts de forme rectangulaire qui paraissent avoir servi à cuire ou peut-être à griller la nourriture. Le troisième type est représenté par un four à deux étages, à usage apparemment purement domestique. Il est possible que de tels fours aient été utilisés aussi bien pour la cuisson du pain au levain que pour la préparation d'autres plats.
This article describes and catalogues a group of fire installations from the Southern Unit at T. Abu Salabikh in Southern Iraq. An attempt is made to determine the uses of the three main types of installations using both archaeological and ethnographic parallels. The first type is the well-known tannur or bread oven ; the second is a group of open rectangular hearths which seem to have been used for heating and possibly for grilling food as well. The third type is represented by one fine two-storey oven, apparently purely domestic in character. It is suggested that such ovens may have been used for brewing as well as for the cooking of leavened bread and other dishes.
