Abstract
The purpose of this study was to compare the quality trait of breast meat of Korean native chickens and broiler in animal welfare farm. The pH value of breast meat of broiler was significantly higher than Korean native chickens (p< 0.05). The breast from broilers showed lower percentages of cooking loss than Korean native chickens but it did not differ significantly (p >0.05). The moisture content in broiler was significantly higher than Korean native chickens (p<0.05). The L* value of breast muscle from Korean native chickens was significantly higher (p<0.05) than broilers. The a* value of breast muscle from Korean native chickens was higher than from broilers but there was no statistical difference. The b* value of breast muscle from Korean native chickens was higher than from broilers but there was no statistical difference like a* value. As a result of comparing breast muscle from Korean native chickens and broilers by electrophoresis, the protein degradation patterns were slightly different.
