Abstract
Diastereoselective synthesis of a strawberry flavoring agent by epoxidation of ethyl trans-beta-methylcinnamate can be used to teach first-semester students of organic chemistry. Within a week almost all of the ethyl trans-beta-methyl-cinnamate is consumed, using m-chloroperbenzoic acid (m-CPBA), and the reaction is easy to set up. The product is ethyl (E)-3-methyl-3-phenylglycidate, common name strawberry aldehyde, a well known food additive also used in perfumes. Students found this experiment interesting.
