Application of a colorimetric method to the determination of the protein content of commercial foods, mixed human diets and nitrogen losses in infantile diarrhoea

Abstract
The colorimetric method is a suitable technique to determine nitrogen and protein content of commercial food and in excretions. Daily nitrogen intake and nitrogen losses were determined in 43 young male children suffering from acute diarrhoea and 15 young males with persistent diarrhoea on liquid formula. It was revealed that persistent diarrhea allowed for more protein retention and digestibility compared to acute diarrhoea with higher protein consumption linked to higher retention and absorption. This method is as effective as the Kjeldahl method and does not require the time or expensive equipment.
