Abstract
This study intends to propose a small independent restaurant operation model (SIROM) that can maintain profitability while minimizing damage to small independent restaurant(SIR) operators even in a crisis similar to the COVID-19 pandemic. The SIROM proposed in this study was derived through theoretical review, exploratory research, and research trend analysis on restaurant selection attributes. Each type of SIROM was classified based on seven characteristics: operation type, selection attribute, kitchen type, location, start-up cost, operating cost, and risk management ability. This study has theoretical implications in that it expanded the scope of research in the field of SIROM by expanding the focus of previous studies on a stable restaurant environment into a crisis. It is also expected to have practical implications for securing the competitiveness of SIRs by presenting the characteristics of each type of operating model according to the manager's experience level and start-up cost budget. The limitation of this study is that the researcher's subjective judgment was used to select key-keyword extraction through topic modeling analysis. Therefore, it needs to find a more efficient topic extraction method in the following studies.
