Abstract
藜麦的营养价值丰富,利用近红外光谱技术(near infrared spectroscopy,NIRS)快速检测藜麦营养成分成为近年来相关领域的研究热点.针对NIRS结合化学计量学方法分析了藜麦各营养成分检测模型,重点综述了NIRS的预处理、波长选择、回归方法和模型评估,以及目前所建立的藜麦脂肪、蛋白质、淀粉、膳食纤维等快速定量检测模型,并对NIRS在藜麦微量营养成分检测中的应用进行展望,以期为低成本、快速检测藜麦营养品质提供参考.
Quinoa is rich in nutritional value,and the rapid detection of quinoa nutritional components by near-infrared spec-troscopy(NIRS)has become a research hotspot in related fields in recent years.In this paper,the detection models of vari-ous nutrients in quinoa were analyzed based on infrared spectroscopy combined with chemometric methods,and the estab-lished rapid quantitative detection models for fat,protein,starch,and dietary fiber were mainly reviewed.The application in nutritional component detection was prospected,in order to provide a reference for low-cost and rapid detection of quinoa nu-tritional quality.
