The article discusses a study by researchers at North Carolina State's Plants for Human Health Institute (PHHI) at North Carolina Research Campus, Kannapolis that addresses military challenge of providing troops in the field with balanced diets with taste appeal while having a shelf life, portability and health-protective functionality. PHHI researchers are developing food ingredients that involve infusing protein powers and flours with nutritious compounds extracted from fruits and vegetables.
