Abstract
The article presents an outline of the changes in the biscuit production process in Venice during the 17th and 18th centuries. These changes started with the outbreak of the war of Morea (1684-1699) and developed from then on. Up to now, scholars have generally considered the biscuit as food for the army and the fleet, so they also had to study the nutritional value of the biscuit. However, during the 17th century, Venice's commitment in the wars against the Ottoman Empire had been growing steadily. The political choice of neutrality in the following century forced the production of biscuits in large quantities. Finally, biscuit was not just food for the military, but played an important role in the political economy of Venice.
