Abstract
The article focuses on the extraction and analysis of phytoallexin resveratrol from red wine. It outlines the use of solid phase microextraction (SPME) and gas chromatography/mass spectrometry (GC-MS) combined with 3-hydroxyl (OH) groups derivatization in the analysis of resveratrol. Results show that the technique of SPME with on-fiber derivatization is quantitative and should be applicable to the extraction of resveratrol from red wine.
