Abstract
The Maine industry brought the American and Canadian shrimp back by rebuilding its infrastructure and markets as the stock improved. According to John Norton, president of Cozy Harbor Seafood in Portland, shrimp in Maine is unique as it produces a sweeter flavor and a beautiful red color because of the environmental conditions and the feed.
