Abstract
The article focuses on Native peoples of the American Southwest dined on a little-known spud and looking for a tiny species of potato called Solanum jamesii, or the Four Corners potato, which they believe has been an often-overlooked food source exploited by people in the region for millennia. It mentions dietary staple is thought to have been instrumental in urbanization and industrialization. It also mentions handheld stones used to grind raw foods against metates.
